Preparation
  1. Sieve dried tomatoes from the oil. Grind them up a little.
  2. Peel the garlic.
  3. Wash and dry the basil.
  4. Grate parmesan on a medium grater.
  5. Pour water into a pot and place it on heat.
Cooking
  1. Put in a small pot pine nuts (without butter!). Fry for a few minutes. Take away from heat.
  2. We need to use a blender for making a sauce.
  3. In the bowl of the blender we put: dried tomatoes, roasted pine nuts, peeled garlic, basil. Blend the contents to a pasty substance .
  4. Transfer the pasta from the blender bowl in a separate bowl. Add olive oil and grated parmesan. Stir everything until smooth.
  5. Put spaghetti to a boiling salted water in a pot. IMPORTANT: Cook the pasta according to the instructions, without cooking of 1 minute. Be sure to note the time. In our case, spaghetti is cooked for 9 minutes according to the instructions, therefore, we cook it for 8 minutes.
  6. Spaghetti are ready al dente (bite retains internal elasticity). Drain the water.Don't forget to leave a small quantity of water in which pasta was boiled.
  7. Put the spaghetti back to the pot. Add 3/4 of red pesto, mix well. Add to the pot a little water in which the pasta was cooked. Mix well again. Pasta should not be thick!
  8. Serve the pasta by portions in a large deep plate, adding a few spoons of the remaining red pesto.
