Black rice with zucchini and shrimps
Black, as you know, is good in everything ... even in the kitchen! We offer you a new and appetizing dish: Venus rice with zucchini and shrimps. This exotic grain variety of ebonite rice with a special aroma, reminiscent of freshly baked bread, is ideal for creating a first course. Shrimps, seasoned with lemon, pepper and tabasco, as well as fried zucchini, are the perfect addition. The quick cooking of crustaceans allows you fully appreciate the authentic flavors. With rice of Venus, with shrimps and zucchini, you will bring to the table a genuine and appetizing dish that will not disappoint you!

Preparation
  1. Wash and dry zucchini. Grate zucchini on a coarse grater.
  2. Peel the garlic.
  3. If you have fresh shrimps, you need to wash them, clean from a shell and tail. Then, cut the shrimps lengthwise, carefully removing the dark intestinal thread. If you have frozen peeled shrimps - unfreeze them. After dry them on a paper towel.
  4. Rinse well black rice.
  5. Wash and dry the lemon. Grate a lemon zest.
Cooking
  1. For cooking black rice, we need a small pot. Send the previously washed black rice to the pot, pour in water (1:2 ratio), place on heat, bring to a boil. Then add salt and cook according to the instructions - 18 minutes.
  2. While the rice is cooking, let's prepare shrimps. Peeled shrimps gently send in a bowl, add a small amount of olive oil. Salt, pepper, then add lemon zest and a few drops of Tabasco sauce. If desired, we can add lemon juice. Marinate for 5 minutes.
  3. Pour a few olive oil into a small non-stick frying pan. In the heated oil put crushed clove of garlic, which will transfer its flavor to the oil. Then, remove the garlic, put grated zucchini in the pan, mix well and simmer for 5 minutes. Constantly stirring the contents.
  4. Heat another pan, lay out the pickled shrimps, fry for 2-3 minutes. Important is not to overcook! Put the fried shrimps on a paper towel.
  5. In a bowl, combine cooked black rice and zucchini. Mix well.
  6. start assembling the dish. For this we need a form (circle / square / oval). We take a plate, in the middle of the plate we put the form and fill it with rice with zucchini. We tamp, so that there are no voids incide. Put on top shrimps. Remove the form. If desired, you can sprinkle with olive oil and decorate the plate with lemon.

Legend has it, that Venus rice was evaluated at the court of the ancient Chinese emperors for its nutritional and aphrodisiac properties (hence the name of forbidden rice).

This rice is rich in fiber and phosphorus, it also contains minerals such as calcium, iron, zinc and selenium. But the most important feature of Venus rice is the high content of anthocyanins, plant substances also found in blueberries and other plants that can capture free radicals and avoid oxidation. Anthocyanins are the components that give Venus rice a distinctive black color.
