Preparation
  1. Peel and finely chop the shallot.
  2. If you have fresh shrimps - wash, peel, remove intestines.
  3. Smoked salmon cut into thin strips.
  4. Finely chop the onion erba cipollino, previously leaving a few feathers for decoration.
  5. Pour water into a pot and place it on heat.
Cooking
  1. Take the middle pot, place it on heat. Pour olive oil, heat up, add chopped shallot. Fry for two or three minutes, keeping a low heat.
  2. Add peeled shrimps to the pot together with the onion, fry ingredients for a few minutes over low heat.
  3. Put the penne to boiling salted water in another saucepan. IMPORTANT: Cook the pasta according to the instructions, without cooking of 1 minute. Be sure to note the time. In our case, the pasta cooks 9 minutes according to the instructions, therefore, we cook it for 8 minutes.
  4. Add dry white wine to the pot with shrimps and onion. Constantly stirring until wine evaporates.
  5. Wine has evaporated, add smoked salmon sliced ​​into thin strips. Stirring few minutes. Pour in cream and tomato sauce. Add salt (slightly) and pepper to taste. Simmer for 2-4 minutes.
  6. Penne are ready al-dente (bite retains internal elasticity). Drain the water. Don't forget to leave a small quantity of water in which pasta was boiled.
  7. Combine penne with the sauce. Mix the contents well. Add a small amount of water to the pot, 30 seconds and our pasta is ready.
  8. Serve pasta in portions, in a large flat / deep plate. Sprinkle with chopped onion. Decorate with sprigs of parsley.
